What are scallops?
Scallops are a type of mollusk, in the shellfish family. They are similar to oysters, clams and mussels. There are two types of scallops you will commonly find- sea and bay scallops. Bay scallops are smaller than sea scallops and the texture is a little more tender.
What do scallops taste like?
Now, if you haven’t had scallops before, you are in for an amazing new dish. Scallops have a very mild flavor, and some describe them as tasting a little sweet! They’re texture is very tender and rich, which is what makes them such a popular seafood.
How do you make Bacon Wrapped Scallops?
- First, rinse your scallops and pat them with a paper towel to dry them.
- Cut your bacon slices in half and gently stretch them out- this step helps the bacon to not shrink as much as it cooks!
- Wrap bacon slice around the scallop and place into a baking dish.
- Brush with melted butter, garlic and Old Bay.
- Bake 10-12 minutes and you’re done!
What temperature do you bake scallops?
Scallops are baked at 400 degrees Fahrenheit. If desired, you can broil the scallops for the last minute or so to get the bacon crispy, just really watch them to make sure they don’t burn.
How do you make sure the bacon is crispy?
- Be sure to gently stretch the bacon slices, this helps to prevent them from shrinking so much as they cook. It will also help the bacon cook more evenly.
- If you want the bacon to be very crisp pre-cook the bacon slightly before wrapping. Place the sliced, stretched bacon on a greased baking sheet. Bake in the pre-heated oven 6-10 minutes until some of the fat has rendered and it is still pliable. Pat the bacon slices to remove as much grease as you can, then wrap the scallops.
How do you know when scallops are done?
Scallops will be opaque in color when cooked through. Also, if you touch the scallop it should be firm, and almost spring back a bit when touched. If the scallop is mushy it is not cooked through. Scallops will be cooked through in the oven in about 10-12 minutes.

Ingredients
- 16 ounces sea scallops, rinsed and patted dry
- 8 slices bacon, cut in half
- 1 tablespoon butter
- 1 teaspoon minced garlic
- 1/2 teaspoon Old Bay seasoning, + more to taste
Instructions
- Preheat the oven to 400 degrees F.
- First, rinse your scallops and pat them dry with a paper towel.
- Cut your bacon slices in half and gently stretch them out- this step helps the bacon to not shrink as much as it cooks.
- If you want to ensure your bacon is crisp pre-cook the bacon in the preheated oven on a greased baking sheet for 6-10 minutes until some of the fat has rendered and the bacon is pliable. Pat the bacon dry. (this step is optional, if you do not wish to pre-cook the bacon simply move to the next step)
- Wrap bacon slice around the scallop, secure with a toothpick and place on a greased baking sheet.
- In a small bowl combine the melted butter, minced garlic and Old Bay. Brush the mixture on each scallop.
- Bake 10-12 minutes until the bacon is crisp and the scallop tender.
- Sprinkle with additional Old Bay, lemon juice and green onions for serving.
