Carrot Cake Smoothie
This easy and healthy carrot cake smoothie is packed with fruits and vegetables. Try this drink for a quick sip and go breakfast!
Let’s be honest. Green smoothies? They might taste delicious. They might be packed with nutrients, they may even be a great way to give you fuel to get the day going! But they sure don’t look very good! I drink a green smoothie at least a couple mornings a week. My favorite is this Mango Peach Green Smoothie.
I totally love the fruity flavors and can’t tell at all that it is packed with spinach. But, I never drink it in a clear glass because bright green thick liquid? Yeah, not super appetizing. However, this delicious Carrot Cake Smoothie is an exception. It is packed with fruits and vegetables, but is beautiful too!
What ingredients do you need to make a healthy carrot cake smoothie?
This Carrot Cake Smoothie is ridiculously simple and loaded with basic ingredients you may already have on hand. For this recipe you will need:
- Carrots
- Frozen pineapple
- Coconut milk
- Vanilla extract
- Sweetener (honey, swerve, maple syrup or stevia)
How do I make a healthy smoothie?
To make a healthy smoothie like this carrot cake flavor begin by adding fruits and vegetables along with a liquid of your choice. Some options are almond milk, coconut milk, juice, regular milk or even chilled coffee or tea.
To make this carrot cake smoothie I add frozen pineapple, fresh carrots, coconut milk, sweetener and vanilla to my blender and blend until smooth.
What are some other easy healthy breakfast recipes?
One of my favorite easy breakfast recipes that can be made ahead of time are these Flourless Peanut Butter Protein Muffins. They are loaded with fruit, peanut butter and protein and they taste more like dessert than breakfast! I always use dark chocolate chips to make these extra decadent.
Another breakfast I love to make ahead of time are these Keto Sausage Egg and Cheese Bites. They are less than one net carb each and reheat perfectly for meal prep. Some other ideas include:
- Banana Nut Smoothie (vegan and nut free but tastes just like banana bread!)
- Dextox Grapefruit Ginger Smoothie
- Sausage and Egg Breakfast Burrito
- Bacon and Egg Bites

I’m big on green smoothies too but this such a great change of pace. Love the flavor!
Yes it is a great switch up!
Ok, this is amazing! So healthy, and I bet this tastes delicious too. And I love that happy, bright color. You’re right, green smoothies are not the most appetizing looking thing.
Isn’t it nice and Springy looking?! I will take anything bright and colorful to get me out of this winter funk!
Yum! What a great idea! Totally trying this ASAP!!
Thanks Michelle!! I really like the flavor combo!
This looks so refreshing and delicious! I love this idea, Annie! My husband is not a fan of the green color so I can’t wait to make this carrot cake version for him 🙂
Yes absolutely! My husband definitely doesn’t drink the green ones voluntarily! haha!
I can’t drink green smoothies through a clear glass either! They just don’t look too appealing. This smoothie on the other hand is a different story. I love this! It’s so gorgeous and the fact that it’s healthy doesn’t hurt either.
The pineapple in this is genius! Arrrrgh…why didn’t I think of that! 😉 Seriously…this is so lovely and sounds perfect. Tomorrow morning’s breakfast, for sure!
Thanks Caroline! I have a ton of carrots left so I am totally trying your version! I love that we both had two totally different interpretations of the same thing! 🙂
So glad to have this new smoothie added to my morning rotation. Kurt and I drink smoothies every morning. I know we’re just going to love this one.

I had a problem with green smoothies forever, and while I’m over it, I love this idea! Carrots are sweet, so they make the smoothie nice and sweet, and this is really pretty, too! Plus I love carrot cake. 🙂 Pinned.
Thanks Marcie!! I do love that it is a healthy and easy! It will be perfect for spring and summer!
This sounds fantastic. I think I’ll probably put the carrot through the juicer first just to make it easier for me.
I hope you enjoy!
