A Denver Omelette is also commonly referred to as a Western Omelette. A traditional Denver Omelette is made with eggs, cheese, bell peppers, ham, and onions. But instead of being wrapped in a tortilla like we have done with our Denver Omelette Breakfast Burritos, the eggs are not scrambled but mixed in with the other ingredients and cooked together until the omelette can be folded over.

Ingredients
 

  • 1 tortilla, regular, low carb or gluten free
  • 2 eggs, , scrambled to you liking.
  • 1 tablespoon chopped bell peppers
  • 1 tablespoon chopped onion
  • 1/4 cup chopped ham
  • 1/4 cup shredded cheddar
  • A pat of butter or spray of oil for skillet

  • Preheat a skillet to medium heat, then add enough butter (or add a spritz of oil) to cover the bottom of the skillet. Add the pepper and onion and saute until they reach your desired tenderness. Remove from skillet and set aside.
  • Place the tortilla in the skillet, then top it with the scrambled eggs, onions, peppers, ham, and shredded cheese. Add salt and pepper to taste.
  • Cook the open tortilla 3-4 minutes. When it has started to brown, pull the tortilla out of the skillet and wrap burrito-style.
