Honey Chipotle Chicken
This sweet and spicy Honey Chipotle Chicken is an easy gluten free dinner with just 6 simple ingredients! It also makes a great meal prep lunch!
I was talking to a friend that is a teacher last week and she mentioned she has two weeks left of Summer vacation. What?! Two weeks?
Schools here let out in late May and start back in early August so Summer break for students and teachers is very short. It got me thinking about all the Summery things I haven’t done yet! And all the Summer meals I haven’t made yet!
One of those is definitely nice big summer salads. I have made this Sweet Corn Salad several times and I make this Asparagus Salad a few times a month, but those aren’t the kinds I am taking about. I mean the kind of salads where you just throw everything you have together, top it with some sort of grilled meat and just go for it!
Honey Chipotle Marinade Recipe
I decided to make a simple, yet super delicious Honey Chipotle marinade for the chicken. The marinade only has five ingredients and would be great on any kind of meat.
I have used this marinade on a lot of seafood, but I’ve tried it on other meats and it’s always a win. Give it a try on:
- Shrimp
- Chicken wings
- Salmon
- Pork tenderloin
- Chicken breasts
- Turkey breast
- Steak
- Try it on other sides- onion rings or baked beans would be a hit with this flavor!
Simply combine your marinade ingredients and meat in a large plastic bag and let marinate for at least 4 hours. Then grill your meat for about 3 minutes on each side until cooked through and lightly charred.
Since the chicken has that great smokey-sweet-kind-of-spicy flavor going on, I paired it with a bed of fresh spinach, cucumber, tomatoes, avocado and ranch dressing. These lighter ingredients helped to mellow out the smokiness from the chicken to make for one totally irresistible salad!

- Adobo sauce- canned
- Lime juice
- Garlic powder
- Garlic salt
Such simple ingredients come together to make such a great flavor! And the best part- all you have to do is mix the ingredients and set your meat in the Honey Chipotle Marinade for a few hours!

- Chicken breast- if you prefer a different cut of chicken, that’s fine
- Honey
- Adobo sauce- canned
- Lime juice
- Garlic powder
- Garlic salt
How do you make Honey Chipotle Chicken?
First, trim your chicken breasts and set aside. Next, combine your honey, adobo sauce, lime juice, garlic powder and garlic salt in a microwave safe bowl. Microwave for 20 seconds or until the sauce is smooth.
Following this, place your chicken in a plastic bag and pour the Honey Chipotle Marinade on top. Leave your chicken to marinate in the fridge for at least four hours.
When you’re ready to cook, simply place on the grill and cook each side for three minutes on each side, or until completely cooked through and enjoy! I also paired this with my favorite Avocado Bacon Dip and a big basket of tortilla chips. Talk about a fiesta!
Storage and Reheating of Honey Chipotle Chicken
To keep leftovers of this chicken fresh, I recommend placing in a glass or plastic container with an airtight lid and placing in the fridge. This Chipotle Chicken will stay fresh for four days. If you are storing just the Honey Chipotle Marinade, I recommend storing in a glass jar. The marinade will stay fresh for up to ten days.
To reheat, simply place on a microwave safe plate and warm in 30 second increments until your desired temperature is reached. Once reheated, use this Honey Chipotle Chicken in a wrap, on another bed of greens, or on top of rice! There are so many great uses for this recipe that you’ll family will never get tired of it!

- 2 tablespoons adobo sauce
- 1 tablespoon lime juice
- 1/4 teaspoon garlic powder

Starting school in early August is just crazy! Here in California we’re out in early July, and go back the Thursday before Labor Day Weekend. So the first weekend back is always a 3 day weekend. Makes for a nice little transition. This chicken looks DELICIOUS!

What brand of adobo sauce did you use? I couldn’t find any that were gluten free.Any substitution suggestions?
Hi Leslie! I contacted La Costena sometime ago and they confirmed it is gluten free. However, I have seen several Chipotle Salsa’s pop up in grocery stores lately, I think one of those would work well as a substitute in this recipe.
