Let’s talk easy, cheesy meals! This Keto Quesadilla is one of my favorite quick and easy dinner recipes. It requires minimal prep, effort or ingredients! The recipe is also incredibly easy to adjust based on your personal preference or the ingredients you have on hand. Basically, this is the ultimate “I don’t want to cook tonight” keto dinner!

To keep these gluten-free and keto-friendly, we skipped the flour tortillas and used tasty cheese wraps from the deli section! Instead of the classic cook in the skillet, we bake our cheese shells (and we don’t have to worry about the messy flip with a spatula!)

  • Quick and easy – It only takes about 10 minutes to melt the cheese wraps into a delicious shell, and there are no fancy cooking methods to learn! Great for beginners, college students, and busy families.
  • Super customizable – Nobody in the family has to have the same dinner. Everyone can choose their own veggies and meats, then it’s easy to add some sauces for each person’s preferences!
  • Perfect way to use leftovers – When you need to clean out the fridge, this recipe uses up whatever meat and veggies you have left in all those little containers! This is a delicious way to save money and reduce waste.

Ingredients for a Keto Chicken Quesadilla

As always, you will find the complete recipe below, just keep scrolling. This is a quick overview of the ingredients you will need for this low carb quesadilla:

  • Cheese Wrap: see notes below, these come in a variety of flavors such as cheddar, colby-jack, parmesan and mozzarella.
  • Cooked Chicken: rotisserie, roast, or grilled chicken all work great. This is an easy way to use chicken leftovers. 
  • Vegetables: Grilled or Sautéed Onions and Peppers

Optional ingredients are avocado, sour cream, guacamole, lettuce, tomato, green onions or hot sauce!

Where can I find cheese wraps?

There are several different brands that offer these cheese wraps in a variety of different flavors. I used Colby-Jack and love the flavor it provides. These can be found in the dairy or deli section of your grocery store. If you cannot find any, you could also create your own like I did with these keto tacos.

How do you make a keto cheese shell?

Heat an oven to 350 degrees F. Place a cheese tortilla on a silicone baking mat and bake approximately 10 minutes or until the edges have browned and it looks similar to my photo.

Allow the cheese shell to cool a just few minutes so you can handle it easily (it should still be warm so it is easily pliable). Add the fillings (consider warming those up in the microwave for ease), fold the cheese tortilla over the chicken and vegetables. Add any extras like avocado, sour cream or hot sauce and enjoy! 

What to serve with a keto quesadilla

We love to drizzle these with enchilada sauce or jalapeno ranch for extra flavor! Try some zucchini chips with salsa verde for a fun, snacky appetizer. You could serve delicious Roasted Cabbage on the side (it’s amazing when sprinkled with a little taco seasoning), or the delicious Cilantro Lime Cauliflower Rice from this recipe.

Can I make this ahead of time?

No, I recommend enjoying this meal fresh, right out of the oven. When the cheese shell sits and cools completely, it can feel a bit rubbery and chewy.

Keto Taco Fillings

Here are some other great ideas just in case you want to consider some other delicious ways to enjoy a keto quesadilla! 

  • Taco Meat: simply brown ground beef (or your other favorite protein) and use this low carb, keto-friendly taco seasoning. 
  • Carnitas: also low carb and keto-friendly, this slow cooker pork carnitas recipe is a family favorite. 
  • Vegetables: other low carb vegetables will work in this dish such as avocado, tomato, mushrooms, sliced radish, green chiles, or jalapeños.
  • Sauces: low carb ranch, jalapeno ranch, salsa, homemade enchilada sauce, or salsa verde are all great options. 
  • Other Wraps: this recipe uses a colby cheese wrap. You can find other varieties such as parmesan, cheddar cheese, or mozzarella. You can also find low-carb tortillas in the store (Mission Carb Balance Tortillas are a favorite), or you can make your own Zucchini Tortillas (bonus: they’re grain-free!).
