What is better than a crispy tortilla loaded with tender chicken and tons of cheese? The addition of BBQ sauce and bacon of course! This BBQ Chicken Quesadilla is a quick and easy meal everyone will love!

Ingredients
 

  • 1 large burrito-sized flour tortilla , low carb or gluten free tortillas work as well
  • 1/2 tablespoon butter , unsalted
  • 2 tablespoons BBQ Sauce, We used G Hughes to make it low-carb
  • 1/3 cup Gouda cheese, shredded
  • 2/3 cup cooked chicken, sliced or shredded
  • 2 tablespoons cooked bacon, chopped
  • 1 tablespoon each red onion and cilantro , optional

  • Spread the BBQ sauce evenly over half of the tortilla, leaving a little space around the edge so that it doesn't spill out during cooking. Sprinkle cheese over the sauce, then place the chicken and bacon on half the tortilla in a single layer. On the other side of the tortilla add the red onion and cilantro.
  • Melt butter in a large skillet on medium heat, then add the prepared tortilla. Allow it to cook for 3-4 minutes. Once it's golden brown, flip the meatless side over to cover the chicken. Flip and cook until both sides are perfectly toasted to a beautiful golden brown.

Notes

To make this recipe low-carb and keto-friendly use a low-carb tortilla, such as Mission Carb Balance tortilla and G. Hughes sugar-free BBQ Sauce. (nutrition facts reflect these ingredients) 1 quesadilla has 7 net carbs.
