This Denver Omelette Breakfast Burrito is a delicious low carb breakfast! Fluffy eggs are combined with peppers, onions, ham and cheese and wrapped in a tortilla, making a perfect meal prep recipe!
Preheat a skillet to medium heat, then add enough butter (or add a spritz of oil) to cover the bottom of the skillet. Add the pepper and onion and saute until they reach your desired tenderness. Remove from skillet and set aside.
Place the tortilla in the skillet, then top it with the scrambled eggs, onions, peppers, ham, and shredded cheese. Add salt and pepper to taste.
Cook the open tortilla 3-4 minutes. When it has started to brown, pull the tortilla out of the skillet and wrap burrito-style.
