Ingredients
 

  • 2 tbsp brown sugar
  • 1 tbsp EACH smoked paprika and garlic powder
  • 2 tsp onion powder
  • 1 tsp salt
  • ½ tsp EACH black pepper and cumin
  • 3 lbs boneless pork roast cut into 3 inch pieces
  • 2 tbsp avocado oil
  • 2 cups barbecue sauce divided
  • 2 tablespoons apple cider vinegar
  • 1 cup beef broth divided
  • Hamburger buns this can make 6-10 sandwiches depending on the size bun you prefer

  • In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cumin. Set aside.
  • Toss the pork pieces with the seasoning mixture until evenly coated.
  • Heat the oil in the Instant Pot on high using the saute setting. Brown the pork for 3-4 minutes, flipping the pieces 2 or 3 times (you may have to do this in batches), then set aside on a plate.
  • Meanwhile, combine 1 cup barbecue sauce, the apple cider vinegar, and ½ cup beef broth in a bowl and set aside.
  • After the pork is done browning and removed from the Instant Pot, add the remaining ½ cup of the broth to the pot and deglaze, scraping up the browned bits.
  • Add the pork and barbecue sauce mixture to the Instant Pot, close the lid, and pressure cook for 45 minutes(it took 6 minutes for my instant pot to first come to pressure). Once Instant Pot has come to pressure it will begin counting down from 45 minutes. Allow for a 10-minute natural release.
  • Remove the meat from the Instant Pot, shred it, and place in a large bowl. Toss in 1 cup of the liquid in the Instant Pot and 1 cup of the BBQ sauce. Serve on buns and with coleslaw or shredded cabbage!




Notes

    1. If you don’t want a super saucy finished product, just toss the shredded pork in the 1 cup bbq sauce and don’t use any of the liquid remaining in the Instant Pot.
    2. Store leftovers in the refrigerator for up to 3 days or in the freezer for up to 3 months. This recipe freezes very well!
    3. My Instant Pot took about 6 minutes to come to full pressure.
