These mini pizza snacks are an easy way to satisfy that craving while staying gluten-free and low-carb! It's the perfect midday keto snack for toddlers, picky eaters, pizza lovers, and busy students.

Ingredients
 

  • 1 5-ounce package pepperoni
  • ½ cup Rao's marinara sauce
  • ¾ cup shredded mozzarella
  • chopped fresh basil, red pepper flakes, grated parmesan, optional for sprinkling

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Prepare a mini muffin tin by *lightly* greasing or adding muffin tins. If you are using a silicone muffin tin like I did you can skip this step.
  • Take three pepperonis and allow them to overlap slightly and gently press into the muffin tin. The base of the muffin tin should be completely covered to create a “cup” shape.
  • Place one teaspoon of pizza sauce in each tin, top with basil, if using, and mozzarella.
  • Bake for 10-13 minutes, depending on how crispy you like your pepperonis.
  • Allow the pepperonis to sit AT LEAST 5 minutes before removing from the tin. REMOVING THEM IMMEDIATELY WILL PREVENT THEM FROM KEEPING THEIR SHAPE.

Notes

  • Use turkey pepperoni for less grease
  • Store in the fridge; enjoy hot or cold
